Cheap Eats: Mexicana Lasagna

What's better on a winter's day than melty, bubbly cheese

Lasagna or Lasagne is the perfect winter-warmer dish, but it's even better if you spice things up.


By adding ground cumin to give a wonderful earthy note and a handful of chopped jalapenos to give the dish a bit of of a kick, it elevates the humble lasagne to spicy new heights.

This recipe will easily feed four adults, so without further ado, here's my recipe for Mexicana Lasagna, a twist on the italian classic.


Here's what you'll need:

  • 450g minced beef
  • 1 onion
  • 1 yellow pepper
  • 1 clove of garlic
  • Any left over raw veg - carrot, celery, swede finely chopped 
  • 2 teaspoons of ground cumin
  • Generous squeeze of tomato purée
  • Carton of passata or tin of chopped tomatoes
  • 8-10 Lasagne sheets
  • Small pot of Creme Frais
  • A handful of sliced jalapeños from a jar, rinse the brine off and chop finely
  • 300g of grated cheese, I like to use Mexicana and a block of pizza mozzarella



Here's what to do:


  1. Fry the mince, onion, pepper and other veg until brown and soft, about 5 mins. 
  2. Add cumin, the chopped jalapeños, season to taste and cook for another couple of minutes.
  3. Squeeze in the tomato puree and cook for two more minutes.
  4. Add the passata and simmer for ten mins
  5. Leave to stand for an hour if you can so that the flavours can infuse and the fat in the mince can melt out
  6. Next boil as many lasagne sheets as you need for your sized dish for five mins, then drain.
  7. Then layer up your dish with the sauce, creme frais, cheese and lasagne sheets like any other lasagne 
  8. Finally bake in a preheated oven for 30 mins at 180 degrees C fan, 200 degrees C normal until the cheese is bubbly and brown.

It's a great way to use leftover veg and hide it from your kids, and if it's a bit too spicy, just reduce the amount of jalapenos.
