Cheap Eats: Turkey & Ham Pie

If you've got some leftover turkey hiding in the back of the fridge, please don't use it in this recipe.


But if you put a lump in the freezer thinking you'll make a dinner out if it in January, then this simple recipe will come in handy.


I've made this a few times with left over roast pork meat and sage and onion stuffing and it works just as well .


Here's what you'll need:

600-800g of turkey, stuffing, ham anything you have leftover 
3 leeks
1 carrot 
1 Knorr stock pot
2 rashers of bacon
500g packet of puff pastry 
1 beaten egg

Here's what to do:

Chop the leeks and bacon and cook in a frying pan for 20 mins with a glug of oil
Take the pastry out of the fridge as it will be easier to roll
Slice the carrot and cook for ten more mins with the leeks
Preheat oven to 180 degrees c fan
Add the chopped meat and cook for five more mins
Dissolve The stock pot in 200 ml of boiling water and add as much as you want to the mixture. If you want a thicker pie filling, don't add it all
Roll out the pastry to the size of pie dish you're using. If you need a new pie dish, I usually get mine from Amazon who have some at good prices.
Put the pie filling in thr dish and put the pastry over like a duvet
Make diagonal slashes across the top and brush with the beaten egg
Bake in oven for 30-40 mins until pie top is brown


Sometimes I like to eat raw meat, but only on rare occasions.




This recipe is easy to customise so add any herbs, leftover meat and veg you have, such as sweet corn, peas.
